We are currently rehabilitating the disused dairy into an artisanal cheese factory featuring les caves d’affinage. Milk will be sole-sourced from a neighbouring family dairy whose cows we also agist.
Our philosophy focuses on making hand-crafted cheeses that express unique and memorable flavours derived from the local grass-fed, super-fresh morning and evening milk as well as cheeses that benefit from patient aging in les caves d’affinage (cheese cave).
