There are a number of agricultural sheds at Melville Park, but one in particular is going to be transformed into a low-walled herb garden of some scale. But you can only sell a certain quantity of fresh herbs.....
The south side of the stables, (originally an open area and then a workshop), will be transformed into an enclosed space that will serve as our herbarium. In it we will prepare our fresh herbs and dry fresh grown culinary herbs. We have ambitious plans and a large cornucopia of both annuals and perennials.
Teas and tinctures will be our focus, with recipes informed by traditional use but qualified by science. Rainwater steam extraction and alcohol extraction (from our own distillery) will be our signature approach to creating these distinct products.
Though technically not herbs or even plants, we will also be growing a variety of culinary and medicinal fungi. And planting lots of symbiotic ectomycorrhizal fungi on the property in association with conifers (think porcini not truffle). And while we are waiting for the fruits of our labors to appear, we will be building a bespoke mushroom room for lions mane, shitake and maitake to name a few.
